Aa traditional confection that is found in some regions of Spain and in countries of Latin America including Chile'. The name Alfajores is arabic in origin. Its basic form consists of two round sweet biscuits joined together with dulce de leche or jam and covered with powdered ...sugar. In most alfajores there are two layers of cake, and a filling in between. I got this recipe from my friend, Antonella Conte' Perez in Santiago Chile. I made these with two layers and dulce de leche and powdered sugar.

Lamb and mashed potatoes.  Think Arabic Shepards Pie.

I attended St. George Antiocian Church in Charleston, WV for years.  The majority of the people who attend are of arabic descent.  You will see many of my submissions are middle eastern in nature. Most of the recipes were given to me by friends over the years, many of them from my "Lebanese Mother" Evelyn Dodrill.

Known as Abesha Comen in Ethiopia. It is traditionally served on a large flat pancake-like bread called Injera.

A little twist on the traditional version of hummus.  The green onion and cayenne pepper give it a little heat, the lemon gives it a little tang.

Hummus is a puree of chickpeas and tahini paste, seasoned with garlic and lemon juice. Wonderful served with pita bread or crackers.  Sometimes I make a hummus sandwich.

Why buy hummus when it is so easy to make. This is the basic recipe but be creative.  Add jarred roasted red peppers that have been rinsed and dried or omit the cumin and add paprika (I like the smoked paprika).  Another version is add a little more lemon juice, omit the cumin and add jarred artichokes. The possibilites are endless.
