Very easy to make Orzo Salad with greek olives, spinach and pinenuts. The dressing is a wonderful blend of olive, balsamic and red wine vinegar with some goodies thrown in.

Shamika's Spinach Tart. You can substitue yogurt for the sour cream. You can assemble this in advance, just refrigerate until ready to use. When you are ready, just take out of refrigerator and pop in the oven.
