Known as Abesha Comen in Ethiopia. It is traditionally served on a large flat pancake-like bread called Injera.

Very easy to make Orzo Salad with greek olives, spinach and pinenuts. The dressing is a wonderful blend of olive, balsamic and red wine vinegar with some goodies thrown in.

Spinach with shallots and sesame seeds. Add some raisins or cranberry for a festive taste.

For a vegetarian or lenten version of Sp inach and Lentil Soup omit the ham and use vegetable broth in place of chicken bouillon.

Shamika's Spinach Tart.  You can substitue yogurt for the sour cream. You can assemble this in advance, just refrigerate until ready to use. When you are ready, just take out of refrigerator and pop in the oven. 

Easy Spinach side dish.  Add some presoaked raisins and chopped apples for a Catalonian style recipe.
