Description

Lasagna is the ultimate comfort food.  My lasagna sauce is made with beef and Italian Sausage. Serve with garlic bread and a nice bottle of chianti.

  • 3/4 box lasagna noodles (12 noodles)
For Sauce
  • 2 Tablespoons olive oil
  • 1/2 ground beef
  • 1/2 lb. Italian sausage casings removed
  • 1 cup chopped onion
  • 4 cloves garlic
  • 1/2 cup chopped parsley
  • 2 (28oz) cans crushed tomatos
  • 2/3 cup tomato paste
  • 1 teaspoon sugar
  • 2 Tablespoons dried basil
  • 1 Tablespoon dried oregano 

Filling

  • 16 ounces­ Ricotta Cheese
  • 1 large egg
  • 3/4 cup grated Parmesan Cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons chopped parsley
  • 16 ounces shredded Mozzarella Cheese
Methods/steps

 

  • In a saucepan heat olive oil and add the first 5 ingredients.  Cook, stirring until beef and Italian sausage are brown.  Drain grease and return to pan.
  • Stir in remaining ingredients.
  • Bring to boil.  Reduce heat to simmer.  Stirring occasionally, cook for 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with 1 cup of sauce and remaining Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 1 hour or until a thermometer registers 145F.  Remove foil and add remaining mozzarella cheeseCool for 15 minutes before serving. 
Additional Tips
I usually make the sauce the day before.
