Egg Cheese - Hrudka - Serrik - Sirecz
Called cirek, sirets, sirok, sirecz, Hrudka or just Easter egg cheese since it traditionally served on Pascha (Easter)
Ingredients
1 dozen eggs
1 quart milk
1/8 tsp. salt
1/4 cup sugar
1 tsp. vanilla
1/8 tsp. ground nutmeg
Methods/steps
- Beat eggs well. Combine all ingredients and cook over medium heat in
double boiler until mixture curdles (will look like watery scrambled
eggs).
- Pour into cheesecloth, pick up all four corners of cheesecloth to make a round ball. Twist top of cheesecloth and tie with string. Hang over bowl in refrigerator and let drip overnight. In a pinch with a full refrigerator you tie the end of the twine to a cabinet handle and let drain over a bowl for a few hours.
- At this point it is done. My husband likes to brown it a few minutes in the oven at 350F. This is only a preference and not necessary.
Additional Tips
Serve with horseradish or beet horseradish
