Spinach with Pine Nuts

Description

Easy Spinach side dish.  Add some presoaked raisins and chopped apples for a Catalonian style recipe.

5 side servings
  • 1 teaspoon olive oil
  • 3/4 cup chopped onion
  • 2 cloves garlic
  • 2 bags (1 pound each) prewashed spinach
  • 1/4 cup toasted pine nuts
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
Methods/steps
  • Heat oil in dutch oven over medium heat.
  • Add onions and garlic, cook until tender, stirring occasionally.  Add one-fourth of spinach to the pan, stirring occasionally.  As spinach wilts add the remaining spinach one-fourth at a time. 
  • Stir in remaining ingredients.
