The basil in the garden is gorgeous - time for pesto. Easy Pesto Recipe to serve over pasta, with seafood or just spread on bread.
- 1/3 cup pine nuts
- 3 cloves garlic, finely minced
- 1 teaspoon lemon juice, fresh
- 1/2 cup Extra Virgin Olive Oil
- 2 cups (packed) of fresh basil leaves
- salt and pepper to taste
- 1/2 cup Parmesan cheese
Add pine nuts, garlic, olive oil and lemon juice to a food processor. Pulse several times. Scrape down sides with rubber spatula. Add salt and pepper. Add basil a little at a time. Pulse as you go. Add Parmesan cheese and process.
