Zucchini Cake
Ingredients
- 4 cups zucchini, coarsely shredded
- 3 cups all purpose flour
- 2 1/2 cups sugar
- 1 1/4 cup vegetable oil
- 1 Tablespoon + 1 teaspoon vanilla
- 1 Tablespoon cinnamon
- 4 eggs, beaten
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup chopped walnuts
Methods/steps
- Preheat oven to 325F. Grease bottom of loaf pans.
- Beat on low speed for 1 minute. Scrape down sides of bowl, beat for another minute or until all ingredients are incorporated.
- Pour into pans. Bake for 50 minutes to 1 hour, until a toothpick inserted comes out clean.
- Cool for 10 minutes. Remove from pans and cool on wire rack.
