Spanakopita
Description
Recipe for my favorite Greek food. Flaky pastry filled with spinach and cheese.
Ingredients
- 1 bunch scallions, chopped
- 3/4 pound unsalted butter (all but 3 Tablespoons melted)
- 2 pounds spinach washed and drained
- 6 eggs lightly beaten
- 3/4 pound feta cheese
- 1/2 pound cottage cheese
- 2 Tablespoons farina
- 1/2 cup chopped parsley
- 2 Tablespoons chopped dill
- salt and pepper
- 1 box phyllo pastry dough
Methods/steps
- Saute scallions in 2 Tablespoons butter until tender.
- Chop spinach and place in large pan. Cover and cook until wilted. Drain; removing as much liquid as possible.
- Mix together the scallions, eggs, feta, cottage cheese, farina, parsley, dill and spinach.
- Unfold the phyllo dough and place under a damp towel. Remove one sheet at a time. Brush generously with melted butter. Cut into thirds. Put a Tablespoon of mix in corner. Fold into triangles. Place each triangle on a buttered cookie sheet. Brush with butter.
- Bake in 400 degree oven for 15-20 minutes until golden brown.
