Scalloped Ramps and Potatoes
Description
It's ramp season, get a cookin'
Ingredients
- 4 medium potatoes, peeled and sliced thin
- salt and pepper
- 3 cups coarsely chopped ramps, including green tops
- 1 cup milk
- 1/2 cup grated cheddar cheese
- 1/2 cup bread crumbs
- paprika
Methods/steps
- Preheat over to 450F Grease a 1 1/2 qt baking dish.
- Place a layer sliced potatoes in the baking dish, salt and pepper.Place a layer of ramps on top of the potatoes. Continue alternating layers, ending up with potatoes on top.
- Pour milk over the top, sprinkle with cheese, bread crumbs and paprika. Bake covered for 20 minutes. Uncover and bank an additional 15 minutes until potatoes are tender
