Insalata di Mare - Italian Seafood Salad
Description
Italian Seafood Salad with mussles, clams, squid served over crisp greens.
Ingredients
- 1/2 pound squid cleaned and sliced into 1/4 inch rings*
- 1 1/2 dry white wine
- 1 1/2 cups water
- 16 medium shrimp
- 2 pounds small clams rinsed and scrubbed*
- 2 pounds mussles rinsed and scrubbed*
- 1 cup celery thinly sliced
- 1/2 cup green onion sliced
- 1/2 cup parsley chopped
- 1/2 cup lemon juice
- 1/4 cup Olive Oil
- 1/4 cup chicken broth
- salt and pepper to taste
- salad greens
- lemon for garnish
Methods/steps
- In a 12 inch frying pan, bring wine and water to a boil over high. Add squid and cook until opaque, no more than 1 minute. Remove squid with slotted spoon and place in large bowl.
- Add shrimp to liquid and cook for 1-2 minutes or until opaque. Remove and add to large bowl.
- Add clams and cook until opened. Discard any that do not open. Remove from liquid, add to bowl
- Add mussles and cook until opened. Discard any that do not open. Remove from liquid, add to bowl.
- Combine celery, green onion, parsley, lemon juice, olive oil, salt and pepper. Pour over seafood.
- Place bowl of seafood in refrigerator and chill for 2-4 hours.
- Garnish with lemon slices
Additional Tips
*Any clams or mussels must be discarded if they do not open after rinsing under cold water. Do not put these in the pot!
*Rinse tubes and tentacles. Remove ann inner clear cartilage in the tubes. Remove pointy beak from center of tentacles.
