Pennsylvania Dutch Cabbage
Description
My grandmother's cabbage recipe with slight modifications.
Ingredients
- 5 cups shredded cabbage
- 4 slices bacon, diced
- 3 Tablespoons brown sugar
- 2 Tablespoons all-purpose flour
- 2 cups boiling water
- 1/2 teaspoon salt
- 1/3 cup cider vinegar
- 1/4 cup finely chopped onion
- freshly ground black pepper to taste.
Methods/steps
- Cook cabbage in 2 quarts boing water for 7 minutesw; drain.
- Meanwhile, fry bacon pieces in a large skillet over a medium-high heat until crisp, lift onto paper towels to drain grease. Set aside.
- Add brown sugar and flour to bacon fat. Cook over low heat, stirring constantly, until smooth. Add boing water, salt, vinegar, onion, pepper and bacon bits. Heat mixture to boiling stirring constantly. If too sour stir in an additional 1/2 cup water.
- Place cabbage on a plate and pour the hot dressing mixture and mix until blended.
