Baked Potato Wedges with Curry Dip

Can me made with Sweet Potatoes for a change.
Ingredients
- 4 large Baking Potatoes
- salt and fresh ground pepper
- 1/4 cup olive oil
Curry Dip
- 3/4 light mayonaise
- 1 Tablespoon lemon juice
- 1 teaspoon mild curry powder
- 1 Tablespoons grated onion
- salt and pepper
Methods/steps
- Preheat oven to 450 degrees
- Cut potatoes into wedges. Mix salt and pepper with olive oil. Coat potatoes with with olive oil mixture. Place on baking sheet. Bake for 45 minutes or until tender.
While potatoes are cooking you can make the dip by mixing all dip ingredients together. This can be made up to a day in advance.
