Hearty meatless paella. The lentils more than make up for the lack of chicken or seafood that is usually in a traditional paella.
The lentils along with the bulgar wheat make this a very filling salad. The lentils are full of protein. I make this recipe for a vegetarian dinner and serve it with a nice crusty bread and some fruit.

For a vegetarian or lenten version of Spinach and Lentil Soup omit the ham and use vegetable broth in place of chicken bouillon.
This vegetarian dish has a wonderful blend of spices and tangy-sweet flavors.
A yummy salsa that can also be a great side dish for a picnic. Extend it even further by serving over shredded iceberg lettuce.
