Lentil Paella
Description
Hearty meatless paella. The lentils more than make up for the lack of chicken or seafood that is usually in a traditional paella.
Ingredients
- 1 medium green pepper, chopped
- 1 medium yellow sweet pepper, chopped
- 1 cup celery, sliced
- 1 medium onion, chopped fine
- 1 medium red onion, chopped fine
- 4 cloves garlic, minced
- 2 Tablespoons olive oil
- 1 cup lentils, rinsed
- 1 3/4 cup vegetable broth
- 1/2 teaspoon turmeric
- 2 medium tomatoes, seeded and chopped
- 1 cup frozen peas, thawed
- 1/3 cup pimiento-stuffed olives, sliced
- 1/3 cup pitted ripe olives, sliced
- 1/4 cup snipped cilantro or parsley
Methods/steps
- In a dutch oven cook first six ingredients in hot oil until the onion is tender but not brown.
- Add lentils, vegetable broth and turmeric to the pepper mixture.
- Bring to a boil; reduce heat and simmer covered for 20-30 minutes or until lentils are tender and liquid is absorbed.
- Stir in tomatoes, peas, stuffed olives, ripe olives and cilantro. Heat through. Season to taste.
