My husband and I came up with this recipe after a friend dropped off some tomatoes and jalepenos out of his garden....it was a great idea.
- 6-8 medium-sized tomatoes, peeled and petite diced
- 3-4 jalepeno peppers, finely chopped(you can leave as
- many of seeds in as you want-depending on the
- level of heat you prefer)
- 1 large onion-petite diced(I prefer to use Vidalia)
- 1-16oz. can peeled petite diced tomatoes(do not drain)
- 1 Tbsp. minced garlic
- 2 tsp. salt
- 1-2 tsp. cumin
- Mix all ingredients together and let sit in fridge for at least 4 hours, even better if overnight.
I always wear rubber gloves to prepare the entire recipe..the tomatoes will stain your fingernails and of course we all know what the peppers and onions will do! If you do get onion in your eyes while chopping, rub your wrists together under cold water, I'm not sure how this works but my mother has told me that for years and it does work for sure.
