- 3 parsnips (peeled and coarsely chopped)
- 3 sweet potatoes (peeled and coursely chopped)
- 1 large onion, cut in 8 pieces
- 1/4 cup olive oil
- 2 Tablespoons balsamic vinegar
- 2 teaspoons chopped fresh rosemary
- 1/2 teaspoon salt
Methods/steps
- Preheat oven to 450 degrees. Coat a large baking sheet with cooking spray.
- Place parsnips, sweet potatoes and onion on baking sheet. Drizzle with oil and balsamic vinegar. Sprinkle with rosemary.
- Bake 25 minutes or until vegetables are tender.
