Lemon Chicken Soup
Description
This soup is tasty.. It's the perfect beginning to a meal. The chicken can be left out if you prefer.
Ingredients
- 2 Tablespoon butter, cubed
- 1/2 cup flour
- 3 cups chicken broth, divided
- 1/2 cup milk
- 1/2 cup half and half
- 1 cup cooked chicken, cubed
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon nutmeg
- 4 lemon slices
Methods/steps
- Melt the butter over medium heat in a soup kettle.
- Stir in the flour and continue stirring until the mixture is smooth.
- Carefully pour in 1 cup of the chicken broth, the milk and the half and half.
- Bring the mixture to a brisk boil.
- Cook, stirring continuously, until the sauce has thickened.
- Carefully add in the cubed chicken, the lemon juice, the sat, pepper and nutmeg.
- Stir to combine the ingredients together well.
- Pour the remaining chicken broth into the kettle.
- Continue cooking over medium heat for 30 minutes or until completely heated through.
- Garnish each bowl of soup with 2 lemon slices.
