Ham and Rice Creole
Ingredients
- 2 medium size center cut ham slices
- 1 cup rice (uncooked)
- 1 green pepper (cut in fine strips)
- 1 cup celery (diced)
- 2 Tablespoons onion (chopped)
- 1 6 ounce can tomato paste
- 1 1/2 cups water
- 2 Tablespoons wine vinegar
- 1 Tablespoon sugar
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon oregano
- 1 bay leaf
Methods/steps
- Place ham in the center of a baking dish. Combine rice,green pepper, celery and onion; arrange around ham in the pan.
- Mix remaining ingredients. Pour combined liquid over the rice and vegetable mixture. Cover with foil and bake at 350 for 1 hour. Remove foil and bake for 5 more minutes.
